Marbré des Alpes is made in Désaignes in the southeast Auvergne-Rhône-Alpes region of France. This cheese is made in a Morbier style using thermised cow’s milk and traditional animal rennet. While Marbré des Alpes contains the vegetable ash layer that is traditionally used in Morbier, it does not follow the exact process of using the ash layer to protect the curds from the night milking until the morning curds are available.
This cheese is washed in a secret brine giving it a semi-firm pate and more aromatic tendencies. Aged for a minimum of four months before release, this twist on a Morbier has vegetal and herbaceous notes with a rich texture that melts similar to Raclette.
