Aged for 12 months and made with unpasteurised cow’s milk by the Trethowan Brothers in Somerset, England. This cheese is made with Jersey cow’s milk – milk usually used for softer cheeses – which gives the cheese its moist, smooth and creamy texture. On the palate, tangy flavour builds with a subtle nuttiness underneath.
