Manchego is made from the milk of Manchega sheep residents of La Mancha region in Spain which is 600 meters above sea level. Our Manchego is aged for 12 months – giving it a butterscotch-coloured flesh and sweet lingering flavour. Third generation cheesemakers, the Iniesta Family are committed to producing a small scale and artisanal cheeses that are recognised around the world. Unpasteurised ewe’s milk. Traditional rennet.
