The complex array of sweet, nutty, floral and herbal notes to be found in Comte is attributed to the cows that supply the milk, and the rich grass-lands they roam. Each wheel of Comté must spend at least 4 months in the maturing cellar before being offered to gourmets. This Comte is aged for 22 months. Unpasteurised cow’s milk. Traditional rennet.
